Restaurant opening consultant for new venues and new locations.
We help operators open a new restaurant, bar or hotel outlet on budget and on time. The work covers the plan, the numbers and the people, from the lease signing to the first months of trading.
What we do together.
Business plan and pre-opening budget
A realistic sales forecast, a pre-opening cost budget and a break-even point you can defend to a landlord, partner or lender.
Menu costing before the menu prints
Every dish costed from its recipe, priced to a target food cost, and checked against the kitchen you actually have.
Staffing and the opening hire plan
How many people, which roles, when they start and what they cost, so labour does not swallow the first quarter.
Systems and suppliers
Point-of-sale, inventory and ordering set up to report the numbers you need, and supplier terms reviewed before the first order.
Training and soft launch
Service standards, a training schedule and a soft-launch sequence that finds the problems before paying guests do.
The first 90 days
Weekly reviews of sales, food cost and labour against the plan, with quick corrections while habits are still forming.
Experience behind the work.
Denys Chernenko led the pre-opening F&B for a 550-room Residence Inn, covering concept, staffing and service standards. He has more than twelve years of restaurant and hotel F&B experience in Canada, China and Cyprus.
Common questions.
When should I bring in an opening consultant?
Ideally before the lease is signed or the budget is fixed, because that is when the biggest cost decisions are made. Help is still useful later, especially in the last weeks before opening, when hiring, training and menu costing all land at once.
Do you work on openings outside Canada?
Yes. The work is delivered remotely, by video call and shared documents, for operators anywhere in the world.
How do we start?
Most operators start with the Operator's P&L Teardown: 90 minutes through your plan or first numbers, plus a written one-page plan, for $450 USD. If more support makes sense, we scope it from there.
