How We Work

How an engagement runs, and what it costs.

Operators asked us to put this on one page, so here it is: the steps, the prices, what you receive at each one, and who this is not for.

The Steps

Four steps, each one optional after the last.

1

A free 30-minute call

Phone or video, no slides, no card. You describe the room and the number that is bothering you. We say honestly whether we can help and what the next step would cost. About half of these calls end here, on good terms.

2

The Operator's P&L Teardown · $450 USD

Ninety minutes by video, with your last three months of P&L in front of us both. We read food, beverage, labour, prime cost, occupancy and the lines underneath them against current benchmarks, and talk through what is driving each gap. Within two working days you receive a written one-page plan: what to fix first, in what order, and roughly what each line is worth. $450 USD, about SAR 1,690, paid on booking. Delivered anywhere in the world. Credited in full against any larger engagement within 90 days.

3

The One-Week Diagnostic

For an operator who wants the full read: a week inside the numbers and, where scoped, on the floor. Labour model, menu costing, vendor pricing, standards across sites. You receive a written diagnostic with a sequenced plan and the working files behind it. Typically in the low four figures; quoted in writing before we start.

4

Scoped engagements

New-venue openings, multi-site consistency programmes, turnarounds and AI roadmaps are quoted as a fixed fee with milestone payments, so the number is known before the work begins. No open-ended retainers. Every engagement ends with a written handoff your team can run without us.

What You Receive

Written, every time.

A plan, not a deck

One page for the Teardown, a short document for the Diagnostic. Plain language, in the order to do things, with the lines that matter named.

The working files

Any model we build for you, you keep: labour models, menu-costing sheets, benchmark comparisons. Editable, not screenshots.

The principal, throughout

You work with Denis Chernenko from first call to handoff. Nothing is passed to a junior, because there is no junior.

Practicalities

Remote by default, on site when it matters.

Where and when

The Teardown and most diagnostics run by video, across time zones, with weekly check-ins for longer work. Site visits are scoped and priced into openings and turnarounds. We work in English, and can run sessions in Russian.

Who this is not for

Operators looking for a rubber stamp on a decision already made, a permanent fractional executive on indefinite retainer, or someone to sell them software. We are independent of every vendor and intend to stay that way.

Start

Two ways in.
